Fish 'n Chips for New Year's Eve lunch

Thanks to Australia being a British settlement, one of the national dishes is "Fish 'n Chips". They know how to do it right! Chips (fries) are a serious business and everyone battles to have the best. Oh but the fish....always battered and fried to perfection. Never greasy and always amazing...if it ain't perfect Fish 'n Chips....they don't serve it. We decided to make it an Australian holiday, seafood all the way! We started with Fish 'n Chips and finished with....well, you will have to check out the pictures to see! It was a traditional Aussie New Years. Our weather on the Gold Coast was 40 knot winds, 20 ft waves and rain, rain, and more rain! So, we spent the night in the shelter of our home watching the Sydney Harbour fireworks display, sipping champagne and eating like kings!
